Campfire Foil Dinners

When planning our meals for our Colorado camping trip, I wanted to keep it simple and do as much as I could before! For one of our meals we just did brats and then I made homemade macaroni and cheese in a foil pie tin before we left, and we warmed it up on the campfire- easy and delicious!

For the 2nd day we did foil dinners! These were SO easy and yummy. All you need is some sort of protein cut up (we went with stew meat) then whatever veggies you want! We added mushrooms, carrots, cut up potatoes, and some peppers. 


Combine your meat and veggies on a piece of foil, and season with a squeeze of lemon and whatever seasoning you would like. I took some Caribbean jerk seasoning from a local spice shop, and also added salt and pepper. 



Once you have added everything, simply wrap the foil up and put it on the grill. I recommend double wrapping the packets just in case there are any tears or spills. We left them on the grill for about 30 minutes, but just adjust your timing based on the protein you pick. 

The best part? No clean up! You can eat right out of the packet then simply toss out your trash!

How was your weekend? 

Ours was so relaxing! My favorite kind of weekend is when we don't have much planned and just get to go with the flow. I also had Columbus day off work, so 3 day weekend for me- wahoo! 

We were in Colorado last weekend celebrating Tristan's 30th birthday (pictures coming soon!) so it was nice to have this weekend at home.

Friday night Tristan and I finally had a chance to try out Julep KC Cocktail Club down in Westport. It's this fun little cocktail lounge with a gorgeous bar and they its floor to wall stocked with liquor bottles. They use a ladder to reach all of the bottles at the top- very entertaining to watch! Their cocktails were really yummy so if you are looking for a fun date night idea, I highly recommend! 

Saturday night for the KSU game I made our favorite white chicken and chorizo chili with jalapeño cornbread. This chili is one we make again and again during the fall and winter! 

I posted the pic on Instagram and received a couple questions for the recipe so here you go! 

The recipe is All Recipe's Cha Cha's White Chicken Chili but we add chorizo into it! Just brown your chorizo first, then set aside and mix back in when you add in your chicken. We also use fresh jalapeños instead of canned ones and sauté them with the onions. Adds a lot of heat and flavor. If you don't like it spicy, I recommend leaving the jalapeños out. Remember the shredded chicken I talked about in my meal planning post? I had some in the freezer which worked perfect for throwing into this chili.


The cornbread recipe I tried is this one. I was impressed with it but next time won't put in as many corn kernels.

Meal Planning Tips and Tricks

I keep waiting for things to slow down, for a week or weekend where we have nothing planned. But the truth is, life just keeps getting busier and we don't even have kids, yet. Between squeezing in an AM workout (tips here), working all day, running errands, laundry, and cleaning it seems like the to-do list is longer than the hours available in a day. On top of all that, trying to squeeze in a healthy breakfast, lunch, and dinner for both my husband and I. Some days I feel like I am just running from task-to-task without much time to kick back and relax. Can you all relate?

Growing up, my Mom always had a delicious homemade meal ready for dinner. When my Dad got home from work, we would sit down at the table and enjoy it together as a family. On top of that, my Mom would also wake up early and make us a hot breakfast before sending us off to school with our packed lunch in hand. Did I mention she also worked full-time? She was pretty much super-woman, still is. Although I appreciated it then, I don't think I fully appreciated it until now realizing how difficult that actually is to do! Thanks Mom :) 

Call me old-fashioned but I want to be the wife that provides for her husband and makes sure he goes off to work with a healthy lunch packed, and comes home to a nice homemade dinner that we can sit down and enjoy together. I think this will become even more important as we have kids. Now, I don't always succeed, but I try really hard!

As I mentioned above though, weeks are crazy and time is a virtue and I don't have hours to spend stopping at the grocery store and slaving away in the kitchen. That's how I have come to discover the importance of meal planning and prepping. It has been my saving grace with a busy lifestyle and helps me stay on track with healthy eating. Today, I am sharing my process for meal planning and prepping in hopes that it will help you, too!

On Saturdays or Sundays (depending on the weekend), I sit down and go through my cookbooks (my 5 favorites can be found here), Pinterest recipes, and food blogs and fill out my meal planning template shown below. I typically plan out dinner Sunday- Thursday. Friday is date night, and Saturday is always a TBD depending what we are doing. After I have picked out dinners, I plan lunches. For Tristan his lunches consist of either leftovers, or a turkey sandwich and chips. He's pretty easy! For me- it varies. Typically leftovers, a salad, or I prep something on Sunday to eat throughout the week. Then last, I plan my breakfasts and snacks and also include my workouts in this document. A little OCD I know, but it helps me! Here is an example of what my template looks like filled out:


Once my spreadsheet is filled out, I make my grocery list and head to the store to collect all my goods. There is nothing I hate more than having to stop at the store on the way home from work so this helps me knock it out at once.

When I get home, I unload all my groceries and start meal prepping. Now, this varies each week depending on what we are having, but here is what I typically prep:

Smoothies: Breakfast for me typically consists of some type of smoothie. I make these fresh each morning, but on Sundays I take out 5 ziplock baggies and fill them with spinach, either blueberries or 1/2 a banana and chia seeds. Then I freeze them! Each morning I pull out one bag, dump it in my Ninja (can be found on Amazon here- best thing ever), add protein powder (my fav is here), typically some almond butter, almond milk, and blend. Easy peasy! 

Overnight Oats: If I am not up for a smoothie, I will usually have overnight oats. If you aren't familiar with overnight oats- it's essentially oatmeal but you let the oaks soak in a liquid overnight to cook vs. cooking them in the microwave or stove-top. Saves time! I will portion out 1/4 cup oats and 2 T. chia seeds into mason jars and keep them in the pantry. The night before, I pour in 1/2 cup almond milk and let it soak all night. In the morning, I pop it in the microwave for 30 seconds to a minute, mix in some almond butter and enjoy! You don't have to warm them up, but I just can't get used to the cold oatmeal texture. 

A quick tip: I use mason jars all the time, but I replace the lids with plastic lids. They are much easier to wash and maintain and they don't rust. You can find them on amazon (link here) or I bought mine at Target. 

Shredded Chicken: I always try to have shredded chicken on hand either in the refrigerator or freezer. It is so easy to top on salads, throw in pasta, or mix with some quinoa and veggies for an easy dinner or lunch. On Sundays, I put 4-6 chicken breasts in a crock pot and cover them fully with chicken broth, then cook on low for 8 hours, or high for 4 hours. Once they are fully cooked I shred them using 2 forks, and let them cool. Once cooled, I pop them in baggies or tupperware and place them in the refrigerator or freezer. 

Wash/ Cut Veggies, Fruits & Lettuce: Let's be real- if my options are dive into a bag of chips, or wash and cut up veggies for a snack, chips are going to win every time. BUT, if I already have veggies and fruit washed and cut up in the fridge, then I am more likely to reach for those. Washing lettuce on Sundays also makes it easier to whip up a quick side salad for dinner. 

Salads: Salads are one of the easiest things to prep. I purchased the salad bowls and to-go dressing containers shown below from Amazon and use them all the time. Once you already have your veggies and lettuce washed and cut, just toss them in your containers and top them with shredded chicken and you are ready to go! Saves a bunch of time to make them all at once!



Now, if you want to get really crazy, you can prep your dinners too. I typically just like to make those fresh each night unless I know I have a crazy week and won't have time to cook. 

I have found that although this whole process takes a little bit of time on Sunday, it makes my week much nicer! Another tip- make the process fun! Turn on some tunes and jam out in your kitchen while you're doing this. Or heck- pour yourself a glass of wine- you deserve it!

Five- On- Friday

Happy Fri-YAY friends!! Here's a quick five on Friday for you! 

{ one } Patio- We poured a patio this week! Ok, well WE specifically did not, but we hired someone to. One of our favorite things to do in the fall, or really anytime, is to sit outside at night and have a fire in our firepit. Our backyard is quite small, so currently we place the portable firepit on the deck. Probably not the safest, but Tristan is an Eagle scout so I'm sure it's A-Ok. Anyways, we officially decided to put in a stamped concrete patio right off our deck, and house our firepit permanently there. They finished pouring it Wednesday so we can't walk on it until Monday- counting the days. Mostly because that means Moose has to go out in a leash every. single. time. I'm the crazy neighbor in my robe walking my dog around trying to get him to poop. The rain mornings have just been great this week...... 

{ two } Immune System- As I mentioned last week, I have been battling strep throat for the second time this year. I consider myself to live a pretty healthy lifestyle, but for some reason my immune systems seems weak, lately. Do any of you have any tips for staying healthy and improving your immune system? I've been reading about immune system essential oils and I am really curious about them. Has anyone had success using them? Tell me in the comments below if you have! 

{ three } Football- Football season is back!!! The only time of the year that Tristan and I don't argue over what to watch on TV is football season. While I enjoy NFL football (my fantasy football team is rocking so far!), nothing makes my heart pitter patter quite like KSU Wildcat football. I stumbled upon this plaid KSU tank top on amazon and I think I need it. It's so cute! 

{ four } Fall Home Tour- I spent last weekend decorating our home for fall. Maybe a LITTLE early, but I could't help myself. I'll be sharing a fall home tour next week on the blog, so be sure to check back! 

{ five } Baked Spaghetti- As the days get a little cooler, I begin craving hearty dishes. I've especially lately had a craving for pasta. Something about diving into a big bowl of cheesy-pasta goodness leaves me smiling. To curb that craving, I'll be making my baked spaghetti this weekend. Cinnamon- Vanilla Iced Coffee

I'm not even going to go as far as to call this a recipe because it's so simple and essentially I just follow the directions on the back of the cold brew coffee concentrate :)

The hot summer mornings leave me craving an Iced Vanilla latte. They are refreshing, filling, delicious and I can't get enough! For the sake my wallet, and because I never leave enough time for the coffee shop in the morning, I have been experimenting with different ways to make something similar at home.

After much trial and error (and really bad tasting drinks)- this is my favorite way to satisfy my craving!


Ingredients: Cold- Brew Vanilla Coffee Concentrate (I got mine at Trader Joe's), Vanilla Coconut Milk, Ice, and Cinnamon to taste 

Step 1: Fill up your glass (I usually use a masor jar or a to-go cup) with ice and and add enough cold brew coffee-concentrate so it fills up 1/3 of the glass. 


Step 2: Mix in a teaspoon of cinnamon- or cinnamon to your taste. I really like cinnamon so I'm not shy.

Step 3: Fill the rest of the glass with the vanilla coconut milk. 



Step 4: Observe how pretty the swirls are, then mix it up and enjoy!

Five- On- Friday: Favorite Cookbooks

Happy Friday! For today's edition of five-on-friday I thought it would be fun to share the five cookbooks I am loving right now. My happy place is a Saturday morning with coffee paging through cookbooks and planning our meals for the week. My cookbook collection continues to grow and my favorites constantly change but lately these five are my favs.... 

{ one } Giada's Feel Good Food - Healthy Recipes and Secrets

I have a mild obsession with Giada. I record her cooking shows and love her philosophy on eating healthy- everything in moderation. My favorite thing about this cookbook is all of the recipes are healthy and guilt-free but they are all delicious. Giada also give tips on how she stays healthy with a busy lifestyle. 

{ two } Plated by Elana Karp & Suzanne Dumaine 

I just recently received this cookbook for my birthday but I have already tagged so many recipes I want to try! This is the perfect cookbook for a combination of weekend and weeknight meals. 

{ three } Happy Cooking by Giada De Laurentiis- Making Every Meal Count Without Stressing Out

I know, another Giada one on the list but I love this one because there are so many recipes and they are all fairly easy! At least the ones I have tried so far. But seriously, she jams a lot of recipes into this book- I highly recommend it!

{ four } The Skinnytaste Cookbook by Gina Homolka- Light on Calories, Big on Flavor 

This one is by far my favorite! I can't say enough good things about it. Gina is a food blogger (skinnytaste.com) and this is her first cookbook. Something I struggle with is keeping our meals healthy but still really delicious and full of flavor. That's what I love about this cookbook- all the recipes are so full of flavor and jam packed with real, whole foods. My favorite recipe I've tried so far is her Kiss my Shrimp n' Grits- so good!

{ five } Cravings by Chrissy Teigen- Recipes For All The Food You Want to Eat

Chrissy Teigen is hilarious. Her captions alone make this cookbook worth browsing! It truly is exactly what the title says- recipes for all of the food you want to eat.

Five random things on Friday :)

{ one } I first want to say thank you ALL for the positive feedback, support, and kind words I have received on my launch my blog. This is something I've wanted to start for a long time and having your support means the world to me. I do not claim to be an expert on anything I write about, but I DO promise to always write about topics that I am truly passionate about and think you will enjoy too! 

{ two } I am SO over this heat!! I'm ready to be able to walk outside and not instantly sweat. With the high temperatures, the last thing I want to do is turn on our oven to make dinner. The answer to that: Giada's Lemon Spaghetti on repeat (recipe here). 


I love it because the only thing that requires cooking is the pasta noodles and whatever protein you add. The sauce is just olive oil, lemon juice, lemon zest, and pasta water. I typically add grilled chicken or grilled shrimp to this but you could also leave the meat out and serve as a side dish. A lot of time to make this even lighter I substitute the pasta for zucchini noodles (Tristan still has his with regular noodles). I highly recommend trying zoodles if you haven't tried them. I bought a spiralizer on amazon (link here) for $17.99 and use it all the time! 



{ three } I recently bought a silk pillowcase on amazon (link here) because I read that sleeping on silk is better for your hair and skin. Worth a try, right! Well, turns out Moose really enjoys the silk, too. Tristan sent me this picture when I was out of town last weekend- stinker! 


{ four } It was FINALLY my turn for Emily Giffin's new book First Comes Love at the library. If you need me this weekend- I'll be reading it on our deck while enjoying my morning coffee. She is one of my favorite authors and I can't wait to dig into this one! 

{ five } Huffington Post posted an article this week that drinking one glass of red wine a day provides the same health benefits as going to the gym for one hour. Not sure I buy it, but I'm also not one to argue with facts. Cheers to that!

Easy Baked Spaghetti

Happy Monday! And Happy August! I can't believe we are already here, where did the first half of the year go?

In the spirit of Monday I am sharing one of my favorite simple recipes. Now don't get me wrong, one of my favorite things to do is pour myself a big glass of wine, turn on my relaxing music and cook. It de-stresses me and I just love doing it. However, on a Monday after working all day, I am going for something that is quick and simple to prep. Enter Baked Spaghetti.

Awhile back in college I was craving a baked pasta dish with all the simple and delicious flavor of spaghetti. I googled "baked spaghetti recipes" thinking there would be endless options of recipes using the simple ingredients I already had on hand for spaghetti. Wrong. I found all sorts of recipes with all sorts of different ingredients included- cottage cheese, cream of mushroom, eggs, etc. None of which I had on hand or really wanted to put in my dish so I came up with my own recipe using basic spaghetti ingredients- marinara sauce, noodles, ground beef and cheese. Much to my surprise it turned out delicious, and is still one of my favorites to make to date.

The dish can easily be made ahead of time and baked when you are ready to enjoy it making it perfect for dinner parties or meal prepping on a Sunday. I also love how versatile it is. You can substitute the ground beef for ground turkey or italian sausage, add in veggies if you want some added greens, or leave out the meat all together if that's your thing. So without further ado, here's how you prepare it:

Ingredients:
1-2 Jars of Marinara Sauce (If you're in the KC area- Cascone's is my favorite)
Whole Wheat Penne Pasta Noodles
1 LB. Ground Beef (or meat of your choice)
Parmesan Cheese
Mozzarella Cheese (Shredded or fresh)

Directions:
  1. Preheat oven to 350 degrees. 
  2. Brown ground beef in skillet on medium heat until cooked through. 
  3. While cooking beef, cook pasta according to instructions- be sure not to overcook as pasta will continue to cook while in oven. 
  4. When the ground beef is cooked through, drain the fat and return to the skillet
  5. Pour 1 jar of the marinara sauce into the skillet and combine it with the ground beef. Once combined, reduce the heat to low. 
  6. Once the pasta is cooked, drain and add the pasta to the skillet and mix it together with the meat and marinara. (Optional- if you like the pasta really cheesy you can add in some mozzarella and parmesan cheese at this point so it gets extra cheesy and delicious). 
  7. Once everything is mixed together, pour in a oven safe baking dish. If you like your pasta extra saucy then I recommend adding the other jar of marinara sauce in at this point. 
  8. Top the mixture with additional mozzarella cheese and parmesan cheese to your liking. 
  9. Bake at 350 for 20-25 minutes or until hot and bubbly. 
  10. To finish it off and get that beautiful bubbly finish, flip on your oven broiler and broil until the cheese turns brown and starts to bubble.
  11. Serve and enjoy!
